Lemony Coconut Energy Bites

 

This snack is a perfect recovery food from a long day of ski training on the hill.

Total Time: 15 minutes

Makes: 16 energy bites

 

Ingredients 

 

1 cup Oats

¾ cup Dried Apricots

¼ cup Cashews

3 tablespoons Shredded Coconut

2 tablespoons Coconut Flour

2 tablespoons Honey

1 tablespoon Coconut Oil

3 tablespoons Lemon Juice

1 teaspoon Lemon Zest (choose organic lemons for zesting as you are using the peel)

 

 

Instructions 

 

1. Combine all the ingredients in a food processor.

2. Mix on low speed until all ingredients are fully mixed, then mix on medium speed until ingredients smoothly combined.

3. Roll batter into 1” balls with your hands.

4. Place balls in fridge or freezer to set for 15 to 30 minutes. Enjoy!

5. Store balls in an airtight container in the fridge or freezer for up to a week.
